We have been busy all summer planning the construction phase of Ediths Market the fist store to be transform into a healthy food hub by the PALOMA project.  We have ordered the 6ft produce fridge that will increase the Fresh Produce at Edith’s Market by more than 400%.   The store has been redesigned to place all junk food in the back of the store where it will be less accessible to buyers.  We have developed a 2 week construction plan that will rehab the building, provide new light fixtures, install the new Fridge system, and provide a new look and feel to the market.  We have also developed a new decor to the market that will fill more inviting and promote healthy food choices.   Construction will begin in early November and Grand Opening is set to be November 17, 2011.

At this current time students are busy developing a marketing plan that will promote the new healthy choices available at Ediths Market.     The students will also be helping in the construction phase and will documenting the Transformation.
